EXTRA VIRGIN OLIVE OIL
My olive grove covers an area of about 4 hectares of land and consists of variety of leccina, oriola, correggiolo and pollinators. It was planted mostly in the mid 90’s, and was raised in polyconic vessel, the classic system for the cultivation of olive trees in Tuscany. Cultural practices that we perform are very simple and minimally invasive, it usually perform two cleaning steps, the first is a proper pruning and the other is the so-called spollonatura or cutting new shoots.
It is our choice to let the grass on the ground so as to have a natural fertilization due to cutting the grass with the advantage of maintaining biodiversity, and especially not to use chemical herbicides, so even with significant cost savings.

Variety “correggiolo” picked up with the right degree of maturity brings its own characteristics resulting in a very intense taste with a spicy high notes and fruity scents characterized by artichoke smell.

Variety “leccina” picked up with the right degree of maturity brings its own characteristics resulting in a bitter taste with aroma of almond.

Variety “Oriola” picked up with the right degree of maturity brings its own characteristics resulting in a typical kind of an oil with more delicate, slightly bitter and slightly spicy, with aroma of thistle, grass clippings.
