VINIFICATION:
After destemming, the must is extracted and fermented at a controlled temperature of 17 ° C for about 15-20 days, then the wine rests for 5 months in steel before entering the barrique where it rests for about 6 months.
Then it is added with sugar and after inoculating the yeasts for the second fermentation in the bottle, after about 30 months of refinement it is disgorged without any addition of liquid and is put on the market.
ORGANOLEPTIC CHARACTERISTICS:
COLOR: The wine has a beautiful yellow shade , limpid and brilliant.
SMELL: On the nose you can feel the varietal notes typical of a classic champenoise method, bread crust and exotic fruit and a general olfactory balance marked by a light floral. The sensation of bread is very clear.
TASTE: The sensation of bread is very clear. in the mouth the wine has a rather fresh due to a good fixed acidity, which is soon accompanied by a sensation of sweetness and warmth

SERVING SUGGESTIONS: In the end the body is full and round. The final sensation is of excellent and balanced.
